It is this core of aluminum that allows the pans to heat quickly and evenly so you don't ever experience hotspots. And another reason the All Clad stainless steel cookware set performs far better than other brands is that the core of aluminum is not only in the base but it also runs up the sides. This is something you just don't get this with most other brands of cookware.
